Hey folks. I'm curious to see if anyone has tried to replicate the fries quatro queso dos fritos from Friday, February 6th. Has anyone given it a try? Is there any such recipe? My friends and I are guessing that it's a variant on a twice baked potato or something like that.

If you watched the episode again, you could probably make them ... the pathlogical liar guy explains exactly how they are made when he is being questioned, so you probably could. Although I have never heard of it before ...

From Lyin' Ryan (Jonathan Silverman) via the show: Inject potatoes with a four cheese mixture. Fry them three-quarters of the way, pull them out, batter them, fry them again, and then serve them with a bacon and ancho chile sour cream.

As soon as I heard the description, I knew I had to attempt it. But I'm having difficulty creating a decent injectable cheese mixture, so the experiments will continue!

Awesome! Though I do have a question. I don't drink (not even as a batter), so would it affect anything to leave that out of the batter? If so, what's a sub? Thanks!

It shouldn't. When I was looking for batter recipes, the first thing I found was for Australian Battered Potatoes, which uses water and self-rising flour instead.

If you're worried about the alchohol in the beer batter, cooking it takes all the alchohol away. The only thing left is the flavor. So you wouldn't be "drinking" If you ate these.

You never cook out all the alcohol, here is a breakdown of how much percentage of alcohol cooks out.

No heat application, immediate consumption 100%
Alcohol ingredient added to boiling liquid, and removed from heat 85%
Flamed 75%
Baked, approximately 25 minutes, alcohol ingredient on surface of mixture (not stirred in) 45%
Baked/simmered, alcohol ingredient stirred into mixture
15 minutes 40%
30 minutes 35%
1 hour 25%
1.5 hours 20%
2 hours 10%
2.5 hours 5%

So I gave these a go the other day. Not nearly as elegant AngieA's.

They are really quite tasty. Need to add bacon to the mix, and get some more dipping sauces.
