Well on this, we can agree....
As for the hair thing, I don't think it's so much about *maturity* as how the total package comes off. I live in southern California and even here, the most liberal place on the planet, there just aren't that many women lawyers, doctors, police officers, CEOs, or other female professionals who wear their hair in their eyes. It's considered a no-no in the professional world. It's an actor-ish thing that immediatly takes her out of the character and reminds me every time I see her, she's just an actor playing a role.
If KE /Eames had come in from day one with her own nuances and quirks, I don't think anyone would accuse her of trying to be like Goren; but she didn't, and so she comes off as plain. Actors talk all the time about the "choices" they make in their performances. Even when she makes her sarcastic remarks, she does it in such a way that it's kind of a "Look at me, I'm funny" feeling I get from her, rather than like some others, who can pull of witty like they're ordering breakfast. It's a talent.

I'd push to say that her slight awkwardness when it comes to some of the "funny" lines makes her more believable as a character. Not everyone is just naturally smooth and funny, but a lot of people try to be. Acting isn't always about coming off as awesome as possible - it can also be about making a character that could be walking down the street and talk to you at any given time. Eames is a very natural, believable character. She's normal. Goren is very odd and rare and not someone you would expect to bump into while having coffee. Eames, in my opinion, is the counterpart. She is something closer to reality, and I think that's what people appreciate about her. You could know her. You could talk to her and have a simple conversation.
And some might call that a bad thing. I don't. I see her as the grounding for the show - a foot in reality while Goren is wandering in space, held by a thin tether. She keeps him in check by being normal. Can't blame a girl for that.
